Homemade Gluten-Free Mexican Pizza

So, when I was in middle school, I loved Taco Bell’s Mexican pizzas. And then to be honest, I forgot about them in my adult years, especially since I don’t eat fast food. But, then randomly, I had a craving. A craving for a Mexican pizza! I figured it would be super easy to make, and I was right! Super simple and healthy with the same deliciousness I loved back in the day. 

I made this Homemade Gluten-Free Mexican Pizza with my new absolute favorite tortillas from Siete Family Foods. These are made with almond flour so they are grain-free, gluten-free, and vegan. What I love about these is not only the taste {seriously so good!}, but how crunchy they are when baked in the oven. Highly recommend!

Then for the ingredients, I used black beans which gives us some fiber and plant-based protein, fresh tomatoes for vitamin C, black olives because I love olives {and because they are a great source of healthy fats and vitamin E}, green onions for vitamin K, and jalapenos for extra spiciness and extra vitamin C and capsaicin.

For the cheese, I ended up using organic shredded cheese. If you’re vegan, there is this amazing new vegan artisan cheese I found made with almond milk from the brand Kite Hill. The only thing is the kind I tried didn’t really melt. I first tried making these with this almond milk cheese, and it didn’t turn out how I hoped. But, it’s still a great option if you’re vegan or dairy-free. Another option is using nutritional yeast, or honestly you could skip the cheese all together and it would still taste fantastic! I, personally, enjoy a little cheese {and my husband loves a lot of cheese} so for us, we would typically add a little sprinkling of organic cheese. To each their own, so whatever option works best for you, your body and preference!

Then right out of the oven, I added fresh arugula and a dollop of avocado + lime cream!

Gluten-Free Mexican Pizza Photo

Serves 2

Ingredients:

4 gluten-free tortillas {I used the almond flour tortillas from Siete}
1 can organic black beans
1/8 – ¼ tsp cayenne pepper {depends on how spicy you’d like it}
1 green onion
1 handful grape tomatoes
1 small can sliced black olives
1 jalapeno {optional}
Your favorite organic shredded cheese
½ avocado
Juice of 1 lime
large pinch of sea salt
2 small handfuls fresh arugula

Directions:

1. Preheat oven to 350 degrees.
2. Drain the water from the can of black beans. Puree beans in blender.
3. Add cayenne pepper to beans and blend well.
4. Spread beans on tortilla.
5. Top with second tortilla.
6. Slice tomatoes and green onion.
7. Add tomatoes, black olives, onions and jalapeno slices to the top tortilla.
8. Sprinkle on desired amount of cheese.
9. Bake on 350 for 5-8 minutes.
10. While your pizzas are baking, blend together avocado, lime juice and sea salt to make your avocado-lime cream.
11. Take out pizzas and top with fresh arugula.
12. Add a dollop of the avocado-lime cream to each pizza.
13. Slice + enjoy!
