Cucumber Mint Sangria Carafe I love a good sangria with fresh fruit, veggies or herbs.  I especially love it in the spring and summer when the weather is beautiful, and you can sit outside and enjoy with some friends.  I recently came up with this Cucumber Mint Sangria and decided to test it out with my family on Easter.  They loved it!  Yay!!  Which means it makes a debut on the blog. The great thing is it’s only 4 ingredients and has no sugar added,  making it a much healthier cocktail than the majority of the sangrias out there!

This cucumber and mint infused cocktail is the perfect spring sangria to make if you’re hosting a brunch, birthday party, bridal or baby shower or a party for one!  Light, refreshing and simple, the combination of mint, cucumber and lime makes this a must-try spring sip! Makes approx. 8 glasses.

Ingredients:

  • 1 chilled bottle of your favorite Riesling  {Trader Joe’s has some great, inexpensive options!}
  • 2 cups lime sparkling mineral water
  • 1 English cucumber
  • 6+ fresh mint leaves

Directions:

  1. Pour wine and lime sparkling water in to a pitcher and stir.
  2. Slice cucumber and add to pitcher.
  3. Add in mint leaves and stir.
  4. Chill in fridge for at least 1-2 hours to allow the cucumber and mint to infuse into the sangria.
