Chocolate Brownies with Almond MilkFor reals. This is one of my absolute favorite recipes I’ve created to date! I am SO excited to share these Almond Butter Cup Brownies with you! I was craving some homemade, healthier brownies recently so got in the kitchen to create a simple recipe…and these were born. It sometimes happens on the first try and it DID! I got the recipe down, and I really want to hear what you think if you bake them. I hope you love them! In addition to being totally delicious, they are gluten-free, grain-free, dairy-free (basically all the frees;) and are made with cacao powder, which is basically raw chocolate and a superfood. Yes, please! Cacao powder is full of magnesium, fiber and antioxidants. 

The almond butter provides protein and healthy fats, and also we’ve got some healthy fats from the coconut oil. Another ingredient I wanted to add is flaxseed. I love adding flaxseed to baked goods as an extra easy way to add in more fiber! 

Almond Butter Cup Brownies

Okay, here’s the recipe!! Enjoy, sweet friend! Makes: 16 brownies

Ingredients:

  • 1 cup almond butter (I use the Whole Foods almond butter directly from the grinder; no sugar, salt or oils added)

  • ¾ cup coconut sugar 

  • ½ cup cacao powder

  • ½ cup almond flour

  • 1/3 cup unsweetened almond milk

  • 3 pasture raised eggs 3 tbsp coconut oil (melted)

  • 3 tbsp flaxseed

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • ¼ tsp Himalayan pink sea salt

  • ¼ tsp baking soda ½ – ¾ cup vegan chocolate chips

Baking Equipment:

Parchment paper 9 x 9 or 13 x 9 brownie baking pan

Directions:

  1. Add all the dry ingredients – coconut sugar, cacao powder, almond flour, flaxseed, cinnamon, sea salt and baking soda – to large mixing bowl and mix together.

  2. In a blender, add almond milk, almond butter, two eggs, vanilla, and melted coconut oil. Blend well.

  3. Stir in the blended wet ingredients to the dry mix.

  4. Use a hand mixer to mix all the ingredients into a nice brownie batter.

  5. Add in the 3rd egg and continue mixing using the hand mixer.

  6. Continue to mix until a nice consistency.

  7. Fold in the chocolate chips.

  8. Before pouring batter into your baking pan, add parchment paper on the bottom and overhang on two sides to easily pull out once the brownies have cooled.

  9. Pour brownie batter into your brownie pan. I misplaced my smaller 9 x 9 brownie pan, however, used a 13 x 9 cake/brownie baking pan and just poured it in the middle of the pan, making it roughly into a square. It did just fine! Another option if you have a 13 x 9 pan is doubling this recipe to make more batter to fill the entire pan.

  10. Bake brownies at 350 degrees for 18-20 minutes. Oven times vary so make sure to keep a close eye on your brownies and do the clean toothpick test to make sure they are baked completely. I baked mine for approximately 18.5 minutes.

  11. Let brownies cool. Take the parchment paper sides to pull brownies out of pan.

  12. Cut into brownie squares & enjoy!

I’ve been wanting to share a fun, simple picnic on the blog, plus I’ve been wanting a new picnic basket and blanket, so I stopped by Target and purchased my new picnic essentials as a birthday gift to myself {yes, I did!}. Obsessed with my new little basket and blanket.  I linked all of my picnic items plus some additional cute options at the end of this post for you!

What could be better than a Picnic with Mini Donuts & Strawberry Mimosas? I think not a whole lot! And what makes it even better is that there should be no guilt whatsoever when enjoying these! They are gluten-free, dairy-free, flourless, and made with my favorite natural baking sugar, coconut sugar. Also, you could call them superfood donuts because they are made with cacao powder, an antioxidant packed superfood. I threw this birthday picnic to enjoy with my hubs and little pug, Scarlett, and also to share with you for an easy spring entertaining idea! You could throw a donuts and champagne picnic for some girlfriends, enjoy with your love and dog like I did, or you could grab a good book and have some great alone time sippin’ on mimosas and eating healthy donuts!

Mini Gluten-Free Chocolate Donuts

Makes 30 mini donuts

Donut Ingredients:

  • 1 cup coconut sugar
  • ½ cup cacao powder
  • 1 organic, free-range egg
  • ½ tsp baking powder
  • 1 tbsp ground flaxseed
  • ½ cup coconut milk {organic, unsweetened full-fat version in can, usually in baking aisle or Asian food aisle}
  • ½ tsp vanilla
  • ¼ tsp cinnamon
  • 1/8 tsp sea salt
  • 1/3 cup mini vegan chocolate chips {I like the Enjoy Life brand}
  • Coconut oil for greasing mini donut pan

Chocolate Icing Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine sugar, cacao powder, baking powder, flaxseed, cinnamon and sea salt in mixing bowl and mix together.
  3. In a separate smaller bowl, combine coconut milk, egg and vanilla and whisk together.
  4. Combine wet ingredients with dry ingredients and mix well.
  5. Fold in the chocolate chips.
  6. Grease your mini donut pan with plenty of coconut oil.
  7. Spoon dough into each donut mold.
  8. Bake 8-10 minutes. Make sure to keep an eye on them so they don’t burn.
  9. While donuts are cooling, make your chocolate icing.
  10. Melt chocolate chips using a double boiler.
  11. Drizzle melted chocolate over donuts.
  12. Top with sprinkles, pop the champs and enjoy!
Note: Keep donuts refrigerated in an airtight container.

Strawberry Mimosas

Ingredients:

  • 2 cartons of organic strawberries
  • Your favorite champagne

Strawberry Mimosas with champagne bottle

Directions:

  1. Juice strawberries in your juicer.
  2. Pour ½ strawberry juice and ½ champagne {or whatever your preference!}.
  3. That’s it! Cheers!

Mexican food is a favorite of many, so I couldn’t pass up sharing some of my favorite healthy, Mexican-inspired recipes I’ve created over the past year. Time to celebrate! Feliz Cinco de Mayo!

3 Festive Recipes for Cinco de Mayo

Spicy Breakfast Tacos

Buenos días! Start your celebrations with some easy, gluten-free breakfast tacos!

Ingredients:

  • 3-4 free-range eggs
  • 5 grape tomatoes
  • 1 jalapeño
  • 1 avocado
  • 2-3 gluten-free tortillas {I use tortillas made with almond flour from Siete Foods! Read more about them in my Mexican Pizza blog post.}

Directions:

  1. Heat up your tortillas in the oven at 350 for about 5 minutes. These heat up pretty quickly, so keep an eye on them. They also get crispy, which I love!!
  2. Grease pan with coconut oil, and make your scrambled eggs.
  3. Slice tomatoes, jalapeno and avocado.
  4. Top tortillas with eggs, tomatoes, jalapeno and avocado.
  5. Enjoy!

Homemade Gluten-Free Mexican Pizza

I made this Homemade Gluten-Free Mexican Pizza with my new absolute favorite tortillas from Siete Family Foods. These are made with almond flour so they are grain-free, gluten-free, and vegan. What I love about these is not only the taste {seriously so good!}, but how crunchy they are when baked in the oven. Highly recommend! Then for the ingredients, I used black beans which gives us some fiber and plant-based protein, fresh tomatoes for vitamin C, black olives because I love olives {and because they are a great source of healthy fats and vitamin E}, green onions for vitamin K, and jalapenos for extra spiciness and extra vitamin C and capsaicin. Then right out of the oven, I added fresh arugula and a dollop of avocado + lime cream! Perfect for lunch or dinner! Click HERE for the full blog post + recipe!

Pineapple Jalapeno Margarita

This post wouldn’t be complete without my sweet + spicy marg! If you need a healthier cocktail idea, this is for you! So simple and much healthier than most margaritas. Homemade happy hour made healthy(ier)!

Ingredients:

  • 1 pineapple
  • 1.5 – 2 jalapeños
  • 2 limes
  • Your favorite high-quality tequila Ice

Directions:

  1. Juice the pineapple, jalapeños and limes.
  2. Fill your margarita glass with ice, add 2 oz. of the spicy margarita mix, 1.5 oz. tequila & garnish with a lime.
  3. Cheers to Cinco de Mayo!

St. Patrick's Day Pancakes Don’t forget to wear your green and don’t forget to eat your greens too!;)  Sharing a fun, simple and, of course, green recipe for St. Patrick’s Day! Easy-to-make healthy St. Patrick’s Day Pancakes with just 5 ingredients plus they are gluten-free and grain-free.  And instead of using food coloring, I just added in spinach for that pretty green color. Not only is the spinach great for the coloring, it’s also the perfect way to sneak in more fiber, vitamins and antioxidants. But, no worries, you can’t taste the spinach at all!  These pancakes are also a sweet way for kids to get in their greens too. Healthy Christmas Chocolate CookiesLast week, I was invited to a Christmas cookie exchange. Obviously, my cookies had to be healthier than your average cookie;) and also taste good! So the pressure was on a bit. Especially because I didn’t have a chance to recipe test them before making them!  I wished myself luck and hoped for the best.  Well, they turned out awesome!  Yay, thank goodness! I always say this once I develop a new recipe I like, but I will say it again, it’s my new favorite recipe. They taste just like mint brownies.  Which actually means you can make these as cookies or also brownies. The cool thing is they definitely don’t taste healthy, but you know they are!  They are dairy-free, grain-free and gluten-free. The coconut sugar is a low-glycemic, unrefined natural sweetener. The cacao powder is considered a superfood and is a great source of fiber, iron and magnesium. Plus, the extra touch of flaxseed provides omega-3 fatty acids, protein and fiber. They are also easy to make with minimal ingredients.  keep reading
