Excited to share this post with you for two main reasons! One, it’s National Popcorn Popping Month, did you know?! Haha, I’m guessing probably not! I recently found out myself. And two, because like everyone else, I love pumpkin spiced everything! So, I thought why not create a fun, simple Halloween treat that is, of course, healthier than most caramelized or sugar popcorn snacks.
This recipe is only 4 ingredients and uses a natural sweetener instead of refined sugar plus coconut oil instead of butter. Some good healthy swapping going on here!
Pumpkin Spiced Popcorn is the perfect Halloween treat to enjoy while watching scary movies, to bring to Halloween parties or just treat yourself to a spooky snack!
Ingredients:
¼ cup maple syrup grade B
½ tbsp coconut oil {melted}
1 tsp pumpkin pie spice
1 tsp vanilla extract
Directions:
1. Pop your popcorn in coconut oil. Try to purchase organic, non-gmo popcorn kernels. You can also buy already popped popcorn if that’s easier. Again, just look for popcorn that is plain, organic and non-gmo {not genetically modified}
2. Pour maple syrup into measuring cup.
3. Mix in coconut oil, vanilla extract and pumpkin pie spice.
4. Mix really well until all combined nicely.
5. Pour pumpkin spice syrup over popcorn.
6. Enjoy!
I’ll be posting more Halloween treats on Instagram, so make sure to follow along for more spelltacular recipes! Think Bloody Mimosas, No-Bake Black Cat Chocolate Cookies, Pumpkin Pizza, and Spooky Spider Cookies…yum!
