Hello August! Grateful we have another month and a half of hot summer days and fresh summer produce! And I highly encourage you to get creative with adding in all the seasonal fruit you can to take advantage of all the nutrients and deliciousness they provide.
Case in point – peachy avocado toast. I wasn’t quite sure how this combo would taste, but it turned out oh.so.good! Avocado toast is one of my favorite light lunches that provides a satisfying, healthy and quick meal. Plus, you can come up with so many fun toppings so you never get bored!
This Peachy Avocado Toast provides you with healthy fats, fiber, antioxidants, vitamin C, potassium, vitamin E, vitamin K, folate, and iron. Plus, the added hemp seeds will provide some extra plant-based protein. It’s a refreshing lunch that will keep you full, increase your energy and is great for pretty skin, hair and nails!
Handful baby arugula
1. Toast your bread.
2. Add baby arugula to toast first.
3. In a separate bowl, mash your avocado until a smooth consistency. Add mashed avocado to toast.
4. Slice peach and add to toast.
5. Top with sprinkles of hemp seeds.
