I wanted to wrap up our 4-week summer smoothie series with an all time summer favorite – peaches! Delicious and juicy, peaches seriously hit the spot during these hot sunshine-filled days. This stone fruit is a great source of vitamins C, A and E, potassium, iron, and flavonoids.
For this smoothie, I decided to create that familiar peach pie taste and bonus…it’s packed with nutrients and is dairy-free, gluten-free, and refined sugar-free. So, it’s basically healthy peach pie in a jar!
1 cup filtered water
¼ cup raw cashews
2-3 pitted dates
1 cup frozen sliced peaches
1 cup fresh sliced peaches
1 tsp vanilla
1 tsp cinnamon
dash of ginger
1 tbsp chia seeds
1 tbsp hemp seed
1. Blend water, cashews and dates first.
2. Then add frozen and fresh peaches and blend well.
3. Add vanilla, cinnamon, ginger, chia seeds and hemp seeds and blend until a creamy smooth consistency.
4. Optional: Top with whipped coconut cream + cinnamon sprinkles.
Note: To make coconut cream, choose an organic, full-fat unsweetened coconut milk in the can. Place the can in the fridge and leave for at least 24 hours. Open can gently and make sure not to shake the can. Scoop out the cream into a mixing bowl. Stop when you begin to see the watery liquid. Then whisk the cream well and add to top of smoothie.
