So, my husband and I have been adding jalapeños to everything lately…our morning green juice, our veggie tacos, our homemade margaritas, the list goes on! We also have a deep love for pineapples, so needless to say, this is one of our favorite dinners. Sweet from the pineapple and spicy from the jalapeños! These goat cheese and jalapeño stuffed turkey burgers are a perfect spring or summer healthy dinner option for you!
This meal is a great source of clean protein. Try to purchase organic, pasture-raised turkey if possible. It’s not only higher quality, cleaner and healthier, but it tastes so much better. You can also add a side salad to get in more greens and veggies. Here’s a Simple Spring Salad that would go perfectly!
Makes: 8 minis
Burger Ingredients:
1lb organic ground turkey meat
1 jalapeño
2 tbsp Northern Mediterranean Blend Seasoning {sold at Whole Foods}
¼ cup goat cheese
Additional Ingredients:
1 cup pineapple
½ avocado
1 cup grape tomatoes
1 pinch sea salt and pepper
Directions:
1. Dice the jalapeño and knead into turkey meat.
2. Add the NMB Seasoning and goat cheese to the meat.
3. Divide the meat into desired size patties.
4. Place on skillet over medium heat for 30 seconds each side to lock in flavor.
5. Place in oven at 350 degrees for approx. 10-15 minutes or until the burgers are baked to your liking.
6. Cube the pineapple.
7. Slice the avocado and tomatoes.
8. Add the pineapple, avocado and tomatoes to the top of the cooked burgers.
9. Add pinch of salt and pepper to each burger.
10. Enjoy!!
