Happy National Strawberry Day! Strawberries are sweet, healthy and pretty so, of course, I had to blog about this special celebration.
Strawberries are packed with vitamin C which is great for pretty skin, anti-aging {stay away wrinkles!} and for our immune system. They are also rich in fiber which promotes good digestion + a healthy heart.
Extra tip: Make sure to buy organic strawberries. Conventional strawberries are on the Environmental Working Group’s Dirty Dozen list which means they are among the highest in pesticides. Not only are organic strawberries cleaner, they are sweeter and just taste better.
In honor of this sweet day, I wanted to share an easy recipe to make chocolate covered strawberries plus share some pictures from the Girls’ Night Valentine Workshop I hosted this month. I partnered up with Pink Champagne Paper for a fun girls’ night of making healthy chocolate covered strawberries, sipping on some pink champagne and making custom one-of-a-kind valentines.
Homemade 3-Ingredient Chocolate
Ingredients:
¼ cup raw cacao powder
2 heaping tbsp coconut oil
2 tbsp 100% pure maple syrup Grade B
Directions:
1. In a saucepan, melt the coconut oil on a low heat over the stove.
2. Add the cacao and mix well.
3. Next, add the maple syrup and continue mixing well.
4. Mix until becomes a smooth consistency.
To make chocolate covered strawberries:
1. Line a baking sheet with parchment paper.
2. Dip organic strawberries into your homemade chocolate.
3. Place dipped strawberries on parchment paper.
4. Place in fridge for at least 20 minutes, allowing the chocolate to harden.
5. Optional: add some fun toppings like cashew pieces, pistachios, coconut flakes, cinnamon or cayenne pepper.
6. Enjoy!
