Last week, I was invited to a Christmas cookie exchange. Obviously, my cookies had to be healthier than your average cookie;) and also taste good! So the pressure was on a bit. Especially because I didn’t have a chance to recipe test them before making them! I wished myself luck and hoped for the best. Well, they turned out awesome! Yay, thank goodness! I always say this once I develop a new recipe I like, but I will say it again, it’s my new favorite recipe. They taste just like mint brownies. Which actually means you can make these as cookies or also brownies.
The cool thing is they definitely don’t taste healthy, but you know they are! They are dairy-free, grain-free and gluten-free. The coconut sugar is a low-glycemic, unrefined natural sweetener. The cacao powder is considered a superfood and is a great source of fiber, iron and magnesium. Plus, the extra touch of flaxseed provides omega-3 fatty acids, protein and fiber. They are also easy to make with minimal ingredients.
Makes 18 cookies.
Ingredients:
- 1 cup coconut sugar
- ½ cup cacao powder
- 1 organic, free-range egg
- ½ tsp baking powder
- 1 tbsp ground flaxseed
- ½ cup coconut milk {organic, unsweetened full-fat version in can, usually in baking aisle}
- ½ tsp mint extract
- 1/8 tsp sea salt
- 1/3 cup mini vegan chocolate chips {I like the Enjoy Life brand}
- Coconut oil for greasing pan
Directions:
- Preheat oven to 350 degrees.
- Combine sugar, cacao powder, baking powder, flaxseed and sea salt in mixing bowl and mix together.
- In a separate smaller bowl, combine coconut milk, egg and mint and whisk together.
- Combine wet ingredients with dry ingredients and mix well.
- Fold in the chocolate chips.
- If you’re using Christmas cookie molds, you will need to grease the pan with coconut oil. Or grease your brownie pan with coconut oil and fill with mix. You could also use muffin/cupcake baking cups. You have several fun options to choose from!
- Bake cookies for 15-16 minutes. Make sure to keep an eye on them so they don’t burn.
- Enjoy!! They are amazing when just out of the oven, so make sure to enjoy one {or two…I won’t tell!} when they are nice and warm.
