It’s finally feeling like summer, which means I’ve been having so much fun in the kitchen testing out new recipes to share with you. And these, I have a feeling, will be your new summer staple!
There’s nothing like chocolate + bananas + treats on a popsicle stick! This is a delicious, healthy and simple dessert to keep you cool all summer long. Plus, you can get creative with all sorts of different toppings!
Makes 6 banana pops.
Supplies:
Popsicle sticks
Parchment paper
Cutting board/baking sheet
Ingredients:
3 bananas
2 organic dark chocolate bars {at least 70% cacao}
Toppings:
Sliced almonds
Unsweetened shredded coconut
Pomegranate seeds
Bee pollen
Sliced raspberries
Dark chocolate chips
Directions:
1. Cut bananas in half {crosswise} and insert popsicle stick.
2. Line a cutting board or baking sheet with parchment paper.
3. Place banana pops on parchment paper and freeze overnight.
4. Using a double boiler, melt your chocolate bars. Note: you can easily make your own double boiler by taking a glass mixing bowl and placing it over a saucepan. Add water to the saucepan, bringing it to a simmer.
5. Break up the chocolate bars and place pieces in glass mixing bowl/top pan of double boiler.
6. Stir chocolate until it melts and is of perfect chocolaty consistency.
7. Dip banana pops into melted chocolate and add your toppings.
8. Make sure to add the toppings quickly as the chocolate will harden fast!
9. After you’ve dipped and added toppings, place bananas back on the parchment paper and place in freezer for about 20 minutes.
10. Take your banana pops out of the freezer, go sit outside in the sunshine & enjoy!
