Homemade Pumpkin Zucchini Soup So, confession time!  I haven’t had the best of luck with homemade soups in the past.  You’d think it would be easy, but I found it a bit difficult to find that perfect balance between being full of flavor and not overdoing it.  No one likes a bland soup, and no one likes a soup that has way too much seasoning.  Take nutmeg for example!  I’m speaking from experience on that one.  Last year, I tried to make a butternut squash soup and added way too much nutmeg and then tried to cover it up with extra ingredients until I just had to give up on the whole thing.  Well, I decided this winter to get back into the kitchen and create a homemade soup I was proud of.  And here it is!  keep reading

Blood Orange & Persimmon Winter Salad Blood oranges have to be one of the most beautiful fruits. The bold red and orange colors combined with the sweet flavor make this unique citrus an all-time favorite. Sometimes they are difficult to find, so when you see them, make sure to snag them! They are delicious to snack on, make fresh squeezed juice or add to a healthy, green salad. Blood oranges are like a superfruit, high in antioxidants, vitamin C, potassium, and fiber. The other superstar in this salad is the pretty persimmon! Persimmons are a great source of vitamin A, fiber, B-complex vitamins, and antioxidants.  keep reading

Peach Pie Smoothie I wanted to wrap up our 4-week summer smoothie series with an all time summer favorite – peaches! Delicious and juicy, peaches seriously hit the spot during these hot sunshine-filled days. This stone fruit is a great source of vitamins C, A and E, potassium, iron, and flavonoids. For this smoothie, I decided to create that familiar peach pie taste and bonus…it’s packed with nutrients and is dairy-free, gluten-free, and refined sugar-free.   So, it’s basically healthy peach pie in a jar!  keep reading
