I’ve been obsessed with making homemade, healthier ice cream the past several summers, and now with the addition of my new ice cream maker (it’s only $59 too!), it has been even more fun creating unique ice cream flavors. Plus, these hot summer Texas days have me craving ice cream on the regular! What inspired this Cherry Rose Dairy-Free Ice Cream was a beautiful photo on the cover of Food & Wine Magazine, the June edition. It looked absolutely delicious. I adapted the recipe to be dairy-free, refined sugar free, less ingredients, plus added in the unique flavor of rose water with dried rose petals sprinkled on top. 

Cherries and Roses

If you’re not familiar with rose water, it’s a popular ingredient in Middle Eastern cooking, but we really should include it more in our recipes as it adds such a beautiful, floral flavor. Now, I must warn you to not use a lot. A little goes a long way! You really just want a delicate hint. You can find rose water at your local Mediterranean/Middle Eastern markets (I love the one in Plano for those of you who live in the Texas area. It’s called Shandiz Mediterranean Grill & Market, located at Coit & Parker.) You can also try health food stores or natural grocers, and if you don’t find it right away, ask someone to help you locate it if they carry it. Rose water is usually stocked in the “ethnic food” section. You can order online as well.

I also want to encourage you to still make this recipe regardless if you have an ice cream maker or not. You definitely don’t need one! I explain what to do in the directions if you don’t have one. It does make it a lot faster (and more fun!) with an ice cream maker, but it is not a necessity.

Cherry Rose Dairy-Free Ice Cream Recipe

Makes 5 scoops

Ingredients:

  • 1 heaping cup unsweetened organic coconut cream (1 to 2 cans)
  • 2 tbsp pure maple syrup
  • 1 – 1½ tsp rose water
  • ½ tsp vanilla
  • ¼ tsp cinnamon
  • ½ – ¾ cup fresh organic pitted & halved cherries
  • 3 tbsp shelled raw pistachios
  • Optional: sprinkle dried edible rose petals on top

Directions:

  1. For the coconut cream, you want to choose an organic, full-fat unsweetened coconut milk in the can. Place the can in the fridge and leave for at least 24 hours. One can of coconut milk may provide enough cream for 1 cup. If not, use a second can.
  2. The cream and water will separate in the can, so be sure not to shake the can because you just want the cream that is on top.
  3. Open can gently and scoop out the cream into a measuring cup. Stop when you begin to see the watery liquid.
  4. Blend coconut cream, maple syrup, rose water, vanilla and cinnamon in blender. Blend well.
  5. Transfer to mixing bowl and whisk.
  6. Fold in cherry halves and pistachios.
  7. Scoop mix into ice cream maker and churn for approximately 20 minutes.
  8. If you don’t have an ice cream maker, that’s fine. You can simply place in the freezer for at least 2 to 4 hours or overnight, and it should still give you a good ice cream consistency. You may have to let it thaw a bit if you leave it in overnight.
  9. Scoop ice cream into bowl or ice cream cone, and enjoy!
  10. Fun option alert: Sprinkle dried edible rose petals on top!

As you’ve heard time and time again, drinking plenty of water is a must, especially in the summer when it’s so easy to become dehydrated. Y’all it’s been so hot here in Texas, and I just crave water all the time! And when I don’t get enough water, I get headaches and migraines. Not fun at all! It’s a top priority to get in plenty of water not only to ward of headaches but also for good digestion, flushing out toxins, helping our body perform all of its necessary functions, helping with weight loss, pretty and glowing skin, and great overall health.

Signs that you may not be drinking enough water are:

Poor digestion, headaches, fatigue, dizziness, hunger, breakouts, dry skin, inability to lose weight, and even bad breath. So drink up buttercup! Plain water can definitely be satisfying, but it’s also so much fun to get creative with some new ideas and tasty additions. So, I wanted to share with you 4 Ways to Make Your Water More Exciting.

1. Fruit, Veggie & Herb Infused Water:

Pour water into your glass and add in your favorite fruits, veggies and herbs or whatever you have on hand. Ideally, allow these to infuse for about 20 minutes in the fridge. You can also purchase a fruit infusion water bottle like this or this fruit infusion pitcher we have and are obsessed with! Here is another cute pink flip-top fruit infuser! Adding in fresh produce and herbs not only adds flavor, it also adds some extra health benefits! Here’s my newest obsession: strawberry, lime, cucumber and mint infused water!

2. Fruity Ice Cubes:

These are awesome! They keep your water cold and also while they melt, infuse into your water. All you do is blend your favorite fruit in a blender and pour into ice cube trays and freeze. I love making watermelon, blueberry, cherry, kiwi, peach, or strawberry ice cubes. You can also combine some flavors too if you’d like, for example, watermelon and strawberry ice cubes. Experiment and find what you like!  And seriously I just found this pineapple ice cube tray and flamingo ice cube tray and must purchase asap!!

3. Pretty Decorative Summer Ice Cubes:

These are mostly to add some beauty to your water (or to your cocktails…but that’s another blog post!;) You’ll want to get the large square ice cube trays, like these, add some pretty flowers like tulips or rose petals. Just make sure they are not poisonous. For example, only parts of tulips are edible, like the petals are considered to be safe for consumption. Never eat flowers that have been treated with fungicide or pesticides. But for these flower ice cubes, again, I would just look at it as decorative rather than consuming any of the flowers just to be safe. As for the ice cubes with added berries, mint and fruit slices, these of course are safe and you can certainly eat the fruit once the cubes have melted!

4. Water Fruit Popsicles:

These are super easy, SO fun to make and seriously delicious! I mean much more delicious than you would anticipate given the little amount of effort and how simple they are! You can definitely taste the fruit flavor as you begin enjoying your water pop. Just fill your popsicle molds with water and add in your favorite sliced fruit or berries. Here are my favorite popsicle molds and here are ring popsicle molds! Like ring pops but in the form of a popsicle.  So fun!

I just love avocados! Because of their delicious taste and many health benefits. They’re a great source of fiber, heart-healthy fats, vitamins K & C, and are packed with potassium {more than a banana!}. They really are one of the healthiest foods you can eat! I’m all about light lunches and simple dinners {and avocados!}.  That’s why I’m super excited to share these Stuffed Avocados 6 Different Ways with you. These stuffed avocados are what clean eating dreams are made of, full of whole foods and primarily plant-based. Many are great for vegan options, and then we have one for cheese lovers, one for shrimp lovers and one for those who like their eggs and {turkey} bacon! I wanted to include something for everyone and a good variety. 

They are super easy and quick to make with simple directions. My fav! They are perfect to make for a healthy lunch or dinner, a summer BBQ, or any summer soiree! And the egg and turkey bacon avocado is perfect for breakfast too. Fun random fact: avocados are also called alligator pears!

Stuffed Avocados 6 Different Ways

Baked Avocado Egg + Turkey Bacon

Crack egg and put yolk and some of the white into the hole of the avocado. Place on baking sheet and bake in oven for 10-15 minutes on 400 degrees. Keep a close eye on it so it doesn’t over cook as ovens may vary. Add sprinkles of chili flakes and a slice of organic turkey bacon. Perfect for breakfast or brunch!

Mango + Shrimp Avocado with Mint

Just add cooked wild-caught shrimp, mango cubes and some fresh mint to your avocado!

Beet Hummus Avocado with Kale Microgreens

First, make your beet hummus. Blend 1 BPA-free can of organic chickpeas, the juice of ½ lemon, 2 tbsp olive oil, 3-4 steamed and peeled baby beets (I get them from Trader Joe’s), and 1/8 tsp sea salt in blender and blend well. If you need a little more liquid to help blend everything together, use a little of the chickpea water in the can. Scoop hummus into avocado hole and top with kale microgreens. I just love microgreens – for being so cute and little, and for being a nutritional powerhouse full of vitamins, minerals and antioxidants.

Spicy Quinoa Stuffed Avocado

First, cook your quinoa. You need 1 cup quinoa and 2 cups water. Make sure to rinse your quinoa with cool water before cooking. Combine quinoa and water in a saucepan. Cover and bring to a boil. Then, reduce heat to a simmer and continue to cook covered for approx. 15 minutes or until all water has been absorbed. Remove from stove and let stand for 5 minutes covered. Scoop quinoa into a bowl and let it cool a bit. Then mix in your favorite salsa. Opt for salsa that is organic and has no sugar added. Then scoop this spicy quinoa mix into avocado hole and top with chives and blue corn tortilla chips. Here is my favorite brand that is non-gmo.

Fill avocado hole with arugula, fresh blueberries and strawberries, and top with crushed raw pistachios.

Yesterday marked the official first day of summer!  Yay!  In honor of this celebration, I’m so excited to share my Vegan Mint Chocolate Chip Popsicles featured on my sweet friend + mama blogger, Debora Manusama-Sinaga’s blog, Mozdeb. One of my favorite summer treats is homemade popsicles!  They are the perfect hot summer day or poolside dessert, and what makes them even better is how easy they are to make + the fact that you can actually make them healthy. For these green and minty pops, I snuck in some spinach for an extra dose of healthiness but I promise you can’t taste it!   These have just 6 ingredients, all of which, of course, are healthy and natural.  Including my favorite vegan chocolate chips!

Making your own bath soaks at home is simple, inexpensive and so much fun! Not to mention they are pure and natural with no dyes or extra chemicals, and you know all the ingredients you’re adding in.

These 4 DIY Summer Bath Soaks will help you relax, de-stress, ease tension and sore muscles, soothe sunburns or bug bites, and moisturize summer skin. Fresh citrus peels, dried lavender and strawberry powder are some of the unique ingredients making these perfect for summer. Not to mention a milk bath using goat milk. This will leave your skin extra soft and make you feel like a queen, side note: it’s been said that Cleopatra used to bathe in goat milk! You can also make these for birthday gifts or a sweet “just because it’s summer” gift for your best friends.

Milk + Honey

  • 1.5 cups whole powdered goat milk
  • 1 cup oat flour
  • 10+ drops almond oil
  • 5 tbsp raw honey

Directions:

  1. Blend rolled oats in blender, turning them into fine oat flour.
  2. In a mixing bowl, add the powdered goat milk and oat flour and mix.
  3. Stir in the almond oil and honey, and mix really well.

Invigorating Citrus Soak

  • 1 cup Epsom salt
  • ½ cup baking soda
  • 3 drops lemon essential oil
  • 3 drops orange essential oil
  • 1 tbsp grated lemon peel
  • 1 tbsp grated lime peel
  • 1 tbsp grated orange peel

Directions:

  1. In a mixing bowl, mix together Epsom salt and baking soda.
  2. Stir in drops of oils.
  3. Using a cheese grater, grate the peels of a lemon, lime and orange.
  4. Stir in citrus peels.

Bedtime Lavender Soak

  • 1 cup Epsom salt
  • ½ cup baking soda
  • ½ cup fine pink Himalayan sea salt
  • 3 drops lavender essential oil
  • ¼ cup dried lavender buds

Directions:

  1. In a mixing bowl, mix together Epsom salt, baking soda and pink sea salt.
  2. Stir in drops of oil.
  3. Stir in dried lavender and mix well.

Soothing Strawberry Soak

  • 1 cup Epsom salt
  • ½ cup baking soda
  • 1 bag unsweetened & unsulfured freeze-dried strawberries

Directions:

  1. In a mixing bowl, mix together Epsom salt and baking soda.
  2. Blend freeze-dried strawberries until it becomes a powder.
  3. Stir in ½ cup of the strawberry powder and mix well.

May is my favorite month! It always has been. Probably because it’s my birthday month…well, honestly, it is because it’s my birthday month;) but I also love the spring weather, flowers, and how the warmer temps and sunshine bring excitement and happy moods.

I’ve been wanting to share a fun, simple picnic on the blog, plus I’ve been wanting a new picnic basket and blanket, so I stopped by Target and purchased my new picnic essentials as a birthday gift to myself {yes, I did!}. Obsessed with my new little basket and blanket.  I linked all of my picnic items plus some additional cute options at the end of this post for you!

What could be better than a Picnic with Mini Donuts & Strawberry Mimosas? I think not a whole lot! And what makes it even better is that there should be no guilt whatsoever when enjoying these! They are gluten-free, dairy-free, flourless, and made with my favorite natural baking sugar, coconut sugar. Also, you could call them superfood donuts because they are made with cacao powder, an antioxidant packed superfood. I threw this birthday picnic to enjoy with my hubs and little pug, Scarlett, and also to share with you for an easy spring entertaining idea! You could throw a donuts and champagne picnic for some girlfriends, enjoy with your love and dog like I did, or you could grab a good book and have some great alone time sippin’ on mimosas and eating healthy donuts!

Mini Gluten-Free Chocolate Donuts

Makes 30 mini donuts

Donut Ingredients:

  • 1 cup coconut sugar
  • ½ cup cacao powder
  • 1 organic, free-range egg
  • ½ tsp baking powder
  • 1 tbsp ground flaxseed
  • ½ cup coconut milk {organic, unsweetened full-fat version in can, usually in baking aisle or Asian food aisle}
  • ½ tsp vanilla
  • ¼ tsp cinnamon
  • 1/8 tsp sea salt
  • 1/3 cup mini vegan chocolate chips {I like the Enjoy Life brand}
  • Coconut oil for greasing mini donut pan

Chocolate Icing Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine sugar, cacao powder, baking powder, flaxseed, cinnamon and sea salt in mixing bowl and mix together.
  3. In a separate smaller bowl, combine coconut milk, egg and vanilla and whisk together.
  4. Combine wet ingredients with dry ingredients and mix well.
  5. Fold in the chocolate chips.
  6. Grease your mini donut pan with plenty of coconut oil.
  7. Spoon dough into each donut mold.
  8. Bake 8-10 minutes. Make sure to keep an eye on them so they don’t burn.
  9. While donuts are cooling, make your chocolate icing.
  10. Melt chocolate chips using a double boiler.
  11. Drizzle melted chocolate over donuts.
  12. Top with sprinkles, pop the champs and enjoy!
Note: Keep donuts refrigerated in an airtight container.

Strawberry Mimosas

Ingredients:

  • 2 cartons of organic strawberries
  • Your favorite champagne

  1. Juice strawberries in your juicer.
  2. Pour ½ strawberry juice and ½ champagne {or whatever your preference!}.
  3. That’s it! Cheers!

Cinco de Mayo is just a couple days away, so I wanted to round up some of my favorite recipes that will help you celebrate! Think spicy breakfast tacos, Mexican pizza {just like Taco Bell but so.much.better!}, and a pineapple-jalapeno marg for some happy hour libations. Mexican food is a favorite of many, so I couldn’t pass up sharing some of my favorite healthy, Mexican-inspired recipes I’ve created over the past year. Time to celebrate! Feliz Cinco de Mayo!

3 Festive Recipes for Cinco de Mayo

Spicy Breakfast Tacos

Buenos días! Start your celebrations with some easy, gluten-free breakfast tacos!

Ingredients:

  • 3-4 free-range eggs
  • 5 grape tomatoes
  • 1 jalapeño
  • 1 avocado
  • 2-3 gluten-free tortillas {I use tortillas made with almond flour from Siete Foods! Read more about them in my Mexican Pizza blog post.}

Directions:

  1. Heat up your tortillas in the oven at 350 for about 5 minutes. These heat up pretty quickly, so keep an eye on them. They also get crispy, which I love!!
  2. Grease pan with coconut oil, and make your scrambled eggs.
  3. Slice tomatoes, jalapeno and avocado.
  4. Top tortillas with eggs, tomatoes, jalapeno and avocado.
  5. Enjoy!

Homemade Gluten-Free Mexican Pizza

I made this Homemade Gluten-Free Mexican Pizza with my new absolute favorite tortillas from Siete Family Foods. These are made with almond flour so they are grain-free, gluten-free, and vegan. What I love about these is not only the taste {seriously so good!}, but how crunchy they are when baked in the oven. Highly recommend! Then for the ingredients, I used black beans which gives us some fiber and plant-based protein, fresh tomatoes for vitamin C, black olives because I love olives {and because they are a great source of healthy fats and vitamin E}, green onions for vitamin K, and jalapenos for extra spiciness and extra vitamin C and capsaicin. Then right out of the oven, I added fresh arugula and a dollop of avocado + lime cream! Perfect for lunch or dinner! Click HERE for the full blog post + recipe!

Pineapple Jalapeno Margarita

This post wouldn’t be complete without my sweet + spicy marg! If you need a healthier cocktail idea, this is for you! So simple and much healthier than most margaritas. Homemade happy hour made healthy(ier)!

Ingredients:

  • 1 pineapple
  • 1.5 – 2 jalapeños
  • 2 limes
  • Your favorite high-quality tequila Ice

Directions:

  1. Juice the pineapple, jalapeños and limes.
  2. Fill your margarita glass with ice, add 2 oz. of the spicy margarita mix, 1.5 oz. tequila & garnish with a lime.

I have to admit, I looked in my fridge and threw this smoothie bowl concoction together on a whim! I didn’t know how it would turn out with the addition of the lemon juice. I love lemon and add lemon juice to the majority of my juices, however, I’m not sure why I wasn’t adding it to my smoothies. Well, I did, and I love how it turned out. There’s just a hint of that fresh, citrus taste and then with the sweet cherries and acai, this bowl has quickly become a favorite of mine and my hubs! He actually said, “who needs ice cream when you have that?!” It was so cute he said that and said it with such enthusiasm. That means a lot especially because he does love ice cream! With that kind of encouragement, I knew I had to share on the blog! 

I posted my Cherry & Fig Acai Bowl recipe last summer and included some great info on what acai actually is and why it’s beneficial. Here’s what I shared: Pronounced ah-sigh-ee, this berry is a powerful superfood, packed with antioxidants {10 times more antioxidants than red grapes}, iron, calcium, fiber, vitamin A, B vitamins, omega fats, and electrolytes. These low-glycemic, dark purple berries look similar to blueberries.  You might be wondering why we don’t eat them as berries and instead consume them in a powder form. Acai berries grow on palm trees found in Central and South America, around the Amazon River regions. Once they are picked, they quickly start to lose their nutritional potency, therefore, they must be freeze-dried or frozen in order to maintain their exceptional nutritional profile and be available for us to enjoy. Cherry & Lemon Acai Bowl Recipe

  Servings: 1-2 {makes plenty if you want to share!}

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 frozen banana
  • 1 cup frozen pitted dark sweet cherries
  • ½ lemon
  • 1 tbsp acai powder
  • 2 tbsp hemp seed

Optional toppings:

Directions:

  1. Pour almond milk into high-powered blender.
  2. Add frozen banana and frozen cherries and blend well. You may need to use a tamper to help you blend as the smoothie will be thick due to frozen fruit.
  3. Add in the juice of ½ a lemon, acai powder and hemp seeds and blend well.
  4. Pour into your favorite bowl.
  5. Top with fresh raspberries, blueberries, granola and dark chocolate chips.  Note: You can add any fun toppings you’d like, such as coconut flakes, raw nuts, almond butter, bee pollen, and other fresh fruit.
